The saucy Portuguese rice that tastes like home

There’s something about a pot of arroz de tomate simmering on the stove that instantly brings you back to a Portuguese kitchen. The smell of garlic, olive oil, and tomato slowly coming together… it’s simple, comforting, and honestly one of those dishes that never misses.

This isn’t just any tomato rice, this is malandrinho style. If you know, you know. It’s not dry, it’s not fluffy — it’s loose, saucy, and meant to be eaten with a spoon. The kind of rice that sits next to grilled fish or meat and somehow steals the whole show.

What I love most about this recipe is how humble it is. No fancy ingredients, no complicated steps — just real, traditional flavours that come together beautifully. This is the kind of dish every Portuguese household makes a little differently, and this version is exactly how I make it at home.

đź§ľ Ingredients


    â€˘    3 tablespoon olive oil
    â€˘    1 onion, finely chopped
    â€˘    4 garlic cloves, crushed
    â€˘    2 tablespoon tomato paste
    â€˘    1 large can crushed tomatoes
    â€˘    1 tablespoon pimenta moĂ­da (adjust to taste)
    â€˘    Â˝ cup vinho verde
    â€˘    1 cup Carolino rice
    â€˘    3 to 3½ cups boiling water
    â€˘    Salt & pepper to taste

👩‍🍳 Instructions

Start by heating the olive oil in a pot or sauté pan over medium heat. Add the chopped onion and let it cook slowly until soft and fragrant, this is your base, so don’t rush it.

Add the crushed garlic and cook for another minute until aromatic. Then stir in the tomato paste and let it cook for 1 to 2 minutes. This step deepens the flavour and gives the dish that rich, classic taste.

Pour in the crushed tomatoes along with the pimenta moĂ­da. Season with salt and pepper, mix everything together, and let the tomato base cook down slightly so the flavours really come together.

Next, add the vinho verde and let it simmer for a couple of minutes. You’ll still get that beautiful flavour without it being overpowering.

Add the rice directly into the tomato mixture and stir to coat every grain. Then pour in the boiling water and give it a gentle stir.

Bring everything to a simmer, lower the heat, and cover the pot halfway, leaving a bit of space for steam to escape. Let it cook slowly, stirring occasionally, until the rice is tender and the texture is perfectly malandrinho.

⏱️ Timing Matters (But Not Too Much)

This dish usually takes about 20 to 30 minutes, depending on your heat and pot. Don’t focus too much on the clock, focus on the texture.

🔥 The Perfect Malandrinho Texture

This is where the magic happens:

    â€˘    Slightly creamy from the starch
    â€˘    Not dry, not too watery
    â€˘    Meant to be eaten with a spoon

If it thickens too much while sitting, just add a splash of hot water and stir, it comes right back to life, just like in every Portuguese kitchen.

Ingredients
  

  • 3 tablespoon olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 tablespoon tomato paste
  • 1 28oz can tomatoes
  • 1 tablespoon pimenta moida (adjust to taste)
  • ½ cup vinho verde
  • 1 cup Carolino rice
  • 3-3 ½ cups boiling water
  • Salt and Pepper to taste

Instructions
 

  • Heat olive oil in a pot or sautĂ© pan over medium heat.
  • Add chopped onion and cook until soft and fragrant.
  • Stir in crushed garlic and cook for 1 minute.
  • Add tomato paste and cook for 1–2 minutes to deepen flavour.
  • Add crushed tomatoes and pimenta moĂ­da. Mix well and season with salt and pepper.
  • Let the tomato base cook down slightly.
  •   Pour in vinho verde and simmer for 2–3 minutes.
  • Add rice directly into the tomato mixture and stir to coat.
  •  Pour in 3 to 3½ cups of boiling water and mix gently.
  • Bring to a simmer, then reduce heat to medium-low.
  • Cover the pot halfway (lid slightly open) and cook slowly.
  • Stir occasionally until rice is tender and the texture is loose and saucy.

Notes

  •  Cooking time may vary depending on heat level — aim for 20–30 minutes
  •  Texture should be malandrinho — loose, glossy, and slightly saucy
  •   If rice thickens too much, add a splash of hot water and stir
  •  Make sure to rinse your rice until the water runs clean, always!
