Made a mouthwatering Portuguese carne assada that was so delicious, my husband suggested I jar the sauce and sell it! Here are the ingredients and steps:
Ingredients:
3-4lbs beef chuck roast
3onion, sliced
3 cloves garlic, minced
1 cup red wine
1/2 EVOO
2 tbsp tomato paste
1 tbsp paprika
1 tsp oregano
Salt and pepper to taste
2 tbsp tomato paste
1 tbsp red pepper paste
2 tbsp pimenta moida
1 chouriço
6-8 potatoes
4 carrots
parsley
Steps:
1. Season the beef with all the ingredients and allow to marinate for minimum 6hrs
2. Preheat oven to 375f
3. In a Dutch oven add potatoes, carrots and chouriço
4. Add in beef marinade and mix it all together
5. Add parsley
6. Cover at roast in oven for 2/3 hr or until beef temperature is at 160
7. Remove beef and allow the meat to rest for 5 minutes
8. Ready to serve and enjoy!
