If you’ve ever wondered how to roast a chicken the Portuguese way, look no further! I’ve got a delicious recipe that will transport your taste buds straight to Portugal. And the best part? You only need a few simple ingredients. So, let’s get started!
Ingredients:
1 whole chicken (around 3-4 pounds)
1 whole red pepper
1 whole onion
4 cloves of garlic, minced
2 tablespoons of olive oil
3 tablespoons butter
1 tablespoon of paprika
1 tablespoon of dried parsley
1 tablespoon of salt
1 teaspoon of black pepper
1 tablespoon of pimenta
1 packet sazon
dash of all purpose seasoning
juice of a lime
Instructions:
1. Preheat your oven or rotisserie to 300°F (220°C).
2. In a small bowl, mix together the butter, sazon, paprika, dried parsley, salt, and black pepper, garlic powder and all purpose seasoning. This will be your flavorful marinade.
To a blender add the red pepper, onion, garlic cloves, olive oil, pimenta, salt, paprika and a splash of lime juice and water. Blend blend blend!
3. Pat the chicken dry with paper towels, then rub the marinade all over the chicken, making sure to get it under the skin as well. This will help the flavors penetrate the meat. Once the marinade is fully rubbed in add the sauce all over the chicken.
4. Place the chicken in a roasting pan, breast side up. Stuff the cavity with the lemon slices for an extra burst of citrusy goodness.
5. Roast the chicken in the preheated oven or rotisserie for about 2 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). To ensure even cooking, baste the chicken with its own juices every 20 minutes or so.
6. Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving. This will help the juices redistribute and make the meat even more tender.
Now, sit back, relax, and enjoy the mouthwatering flavors of Portugal right in your own home. Bom apetite!
