Ingredients:
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 small red onion, finely chopped
• 1 green pepper, diced
• 1 cucumber, diced
• 1-2 tomatoes, diced
• ¼ cup fresh parsley, chopped
• ¼ cup olive oil
• 2 tbsp red wine vinegar or lemon juice
• ½ tsp paprika (optional)
• ½ tsp salt
• ¼ tsp black pepper
Instructions:
1️⃣ In a large bowl, combine the chickpeas, red onion, green pepper, cucumber, tomatoes, and parsley.
