✨🥕Arroz com Cenouras aka Portuguese Carrot Rice
— is one of those humble, comforting dishes that show up on the table next to grilled meats, pan-fried fish, or even just a runny egg. It’s simple, flavourful, and a total staple in Portuguese homes (especially when you’re trying to make that one lonely carrot in the fridge feel important). 😆
Ingredients:
• 1 cup long-grain rice
• 2 medium carrots, grated
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 2 tbsp olive oil
• 2 cups water or broth
• 1 bay leaf
• Salt to taste
• Fresh parsley, chopped (for garnish)
Steps:
1. Heat olive oil in a pot over medium heat. Sauté the onion and garlic until soft.
2. Add the grated carrots and bay leaf. Cook for 2–3 minutes.
3. Stir in the rice and mix to coat. Season with salt.
4. Pour in water or broth. Bring to a boil, then cover and reduce heat.
5. Simmer for 15–18 minutes, or until the liquid is absorbed.
6. Remove from heat, let sit for 5 minutes, then fluff and garnish with fresh parsley.
Serve it with grilled meat, fish, or just a fried egg if you’re feeling lazy-but-fancy.
