A Canadian classic with a bold Portuguese twist: crispy fries loaded with smoky chouriço, queijo São Jorge, and smothered in a rich, garlicky Bife à Casa-style gravy. 🤤

One bite, and you’ll understand why this combo just makes sense.

Ingredients:
For the base:
• 4 cups French fries (homemade or frozen, baked or fried)
• 1 cup chouriço, sliced and pan-fried
• 1½ cups Queijo São Jorge, shredded or cut into small cubes (or cheese curds)

For the Bife à Casa gravy:
• 2 tbsp olive oil or butter
• 4 garlic cloves, minced
• 1 small onion or shallot, finely chopped
• 2 tbsp flour
• 2 cups beef broth
• 1 tbsp Worcestershire sauce
• 1 tbsp Dijon or grainy mustard
• 1 splash white wine (optional, for deglazing)
• 2–3 tbsp heavy cream (for richness)
• Salt and black pepper to taste
• Optional: dash of Piri Piri or hot sauce for heat

Steps:
1. Cook the fries:
Bake or fry your fries until golden and crisp. Set aside.
2. Pan-fry the chouriço:
Slice and lightly pan-fry chouriço until crispy on the edges. Remove and set aside, reserving some of the oil in the pan.
3. Make the gravy:
In the same pan, add olive oil or butter if needed.
Sauté garlic and onion until soft and fragrant.
Stir in flour to create a roux, cooking for 1–2 minutes.
Slowly whisk in beef broth, scraping up any browned bits.
Add Worcestershire, mustard, and a splash of wine if using. Simmer until thickened.
Finish with heavy cream, salt, pepper, and a touch of heat if desired.
4. Assemble the poutine:
Layer hot fries in a dish, then crispy Chouriço, top with cheese.
Pour hot gravy over the top to melt everything together.
