This is my Avó’s way of making the most tender, crispy Filetes de Peixe — and the secret?
Letting the fish marinate in milk!
The milk tenderizes the fish beautifully and gives you that melt-in-your-mouth bite we all dream of.
Here’s how to do it the easy, modern Avó way:
Ingredients:
• 6 white fish fillets (I used cod)
• Milk (enough to cover)
• Juice of 1 lemon
• Salt, pepper, paprika
• Flour (seasoned with a little more salt and pepper)
• 2 beaten eggs
• Avocado oil for frying
Steps:
1. Marinate the fish in milk, lemon juice, salt, pepper, and paprika — for at least 4 hours (or overnight for even more magic).
2. Pat the fillets slightly dry.
3. Dredge them lightly in seasoned flour, dip in beaten egg, then back into the flour.
4. Fry in hot avocado oil until golden and crispy.
And that’s it — pure Portuguese comfort in every bite.
