Ingredients:
– 2 fillets salted codfish (bacalhau)
– 2 cups batata pala or potatoes, thinly sliced into matchsticks
– 3-4 shallots or onions
– 3 cloves of garlic, minced
– 7 eggs
– pimenta moida to taste
– salt and pepper to taste
– black olives, pitted
– parsley, finely chopped
– Olive oil
Steps:
1. Start by soaking the salted codfish in water overnight to remove excess salt. Change the water a few times.
2. Boil the codfish in water for about 5 minutes until tender. Remove the skin and bones, then flake the fish into small pieces.
3. In a large skillet, sauté the shallots and garlic in olive oil until translucent.
4. Add the sliced potatoes and cook until they are soft and slightly golden.
5. Stir in the flaked codfish.
6. In a separate bowl, whisk the eggs and pour them over the mixture in the skillet. Gently stir until the eggs are cooked and scrambled.
