Bife à Portuguesa – Portuguese Steak with Garlicky Wine Gravy & Crispy Prosciutto

Ingredients:
• 2 steaks (sirloin or striploin)
• Salt, black pepper & paprika to season
• 4 garlic cloves, smashed
• 2 bay leaves
• 1 ½ cups dry white wine
• 1 ½ tbsp Dijon mustard
• 3 tbsp butter
• Olive oil for frying
• 4 slices prosciutto

Steps:
1. In a hot pan with a bit of olive oil, crisp the prosciutto until golden. Remove and set aside.
2. Season steaks with salt, pepper, and paprika. Sear in the same pan (hello, flavour!). Set aside.
3. Lower the heat and add garlic and bay leaves—let them get golden and fragrant.
4. Deglaze with wine, stir in Dijon, and simmer.
5. Add butter and stir until you’ve got a silky, spoon-coating sauce.
6. Return steaks to the pan to soak up that garlicky goodness.
