Here’s how I made it:
Ingredients:
• 1 lb flank steak (or beef of choice)
• Olive oil, salt & pepper
• 1 onion, chopped
• Garlic powder & paprika
• 1-2 tomatoes, chopped
• ½ jar passata
• 2 bay leaves
• 1 ½ cups red wine
• 2 cups water
• 2 -4 potatoes, chopped
• 2 carrots, chopped
• 2 cups peas
• Parsley to finish
How to Make It:
1. Season the beef with salt, pepper, and olive oil—let it rest. Sear it on both sides, then remove.
2. Sauté onions until soft, then add garlic powder and paprika.
3. Stir in chopped tomatoes, passata, and bay leaves, letting everything cook down.
4. Pour in red wine (yes, the good stuff) and let that simmer before adding water.
5. Add the beef back in, cover, and let it cook on low until it’s fall-apart tender.
6. (Optional but worth it: remove the meat, strain the sauce for a silky finish, then return the meat.)
