Porto Bifanas: A delicious Portuguese specialty!
Ingredients:
1 lb Pork cutlets, thin
3 Bay leaves
5 cloves Garlic
1 Lemon, juiced (small)
2 tsp Pimenta sauce
2 tbsp Red pepper paste
1 tbsp Paprika
Coarse salt, to taste
1/2 cup Olive oil
3/4 cup Beer
Port wine
Whiskey
3/4 cup White wine
chicken stock
Steps:
1. In a bowl, combine the lemon juice, piri piri sauce, red pepper sauce, paprika, and salt. Mix well to create a marinade.
2. Add the pork cutlets to the marinade, ensuring they are fully coated. Let them marinate for at least 30 minutes, or overnight for more flavor.
3. In a large skillet, heat the olive oil over medium-high heat. Add the onion, bay leaf and garlic cloves, and sauté until fragrant.
4. Remove the bay leaves and garlic from the skillet and set them aside.
5. In the same skillet, add the marinated pork cutlets and cook them until browned on both sides.
6. Reduce the heat to medium-low and add the beer, port wine, whiskey, and white wine to the skillet. Stir well to combine.
7. Return the bay leaves and garlic to the skillet, cover, and let the bifanas simmer for about 20 minutes, or until the pork is cooked through and tender.
8. Serve the bifanas hot, with the cooking juices poured over them. They are traditionally enjoyed in a popsic but you can also serve them with rice or fries.
