🍄 Portuguese Garlic Mushrooms (Cogumelos à Portuguesa)
Simple, garlicky Portuguese-style mushrooms cooked in olive oil, white wine, and tomato paste with a hint of spice from pimenta moída. Perfect as a side dish or served over mashed potatoes, meat, or pasta.
Ingredients
- 500 g cremini mushrooms
- 4 tablespoon extra virgin olive oil
- 4-6 cloves minced garlic
- 1 chopped onion
- 1 teaspoon paprika
- 1 tablespoon tomato paste
- 1 tablespoon pimenta moida (optional)
- ½ cup vinho verde
- salt and pepper to taste
- 1 tablespoon chopped parsley
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and cook until soft and lightly golden.
- Add garlic and cook for about 30 seconds until fragrant.
- Add mushrooms and sauté until they release their moisture and begin to brown.
- Stir in paprika, pimenta moída, and tomato paste. Mix well to coat.
- Pour in white wine and let simmer until slightly reduced.
- Season with salt and pepper to taste.
- Finish with fresh parsley and a drizzle of olive oil before serving.
