🥗 Salada de Grão-de-Bico (Portuguese Chickpea Salad)
A fresh and simple Portuguese chickpea salad made with crisp vegetables, olive oil, and vinegar. This Salada de Grão-de-Bico is light, healthy, and packed with fibre and flavour, perfect as a quick meal or refreshing side dish.
Ingredients
- 1 15oz chickpeas, drained and rinsed
- 1 small red onion, finely chopped
- 1 green pepper, diced
- 1 cucumber, diced
- 1-2 tomatoes, diced
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- ½ teaspoon paprika (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine the chickpeas, red onion, green pepper, cucumber, tomatoes, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), salt, pepper, and paprika.
- Pour the dressing over the salad and toss until well combined.
- Let the salad rest for at least 15 minutes to allow the flavours to develop.
- Serve chilled or at room temperature.
