Bifanas à Moda do Porto: Traditional Portuguese Pork Sandwiches 🇵🇹
Tender, super-thin pork bifanas simmered in a rich Portuguese molho (sauce) made withSuper Bock beer, white wine, Port wine, garlic, bay leaves and traditional seasonings. Inspired by the famous Porto-style bifana, these juicy pork sandwiches are served in fresh papo sects (portuguese buns) with plenty of delicious sauce.
Ingredients
- 2 lbs super-thinly sliced pork bifana
- 3 tablespoon olive oil
- 2 tablespoon banha pork lard
- 6 garlic cloves , minced
- 3 bay leaves
- 1 tablespoon paprika
- 1 teaspoon white pepper
- 1 teaspoon coarse salt add more if needed
- Piri-Piri to taste
- 1 bottle beer super bock preferably
- ¾ cup dry white wine
- 3 tablespoon ruby Port wine
- 3 tablespoon whiskey
- 2 tablespoon Worcestershire sauce
- juice of half a lemon

- 4-6 Fresh Papo Secos
Instructions
- Step 1: Prepare the Garlic and Bay Leaf BaseHeat 3 tablespoon olive oil and 2 tablespoon pork lard in a wide pot over medium-low heat.Add 6 thinly sliced garlic cloves and 3 bay leaves.Cook gently for approximately 1 minute, stirring occasionally, until the garlic becomes fragrant. Do not allow the garlic to brown.
- Step 2: Add the SeasoningsAdd 1 tablespoon sweet Portuguese paprika, 1 teaspoon white pepper, 1 teaspoon coarse salt and piri-piri to taste.Stir for approximately 20 to 30 seconds, allowing the seasonings to become fragrant without burning the paprika.
- Step 3: Build the MolhoPour in beer, dry white wine, ruby Port wine, whisky and Worcestershire sauce.Stir everything together and bring the sauce to a gentle simmer
- Step 4: Simmer the MolhoAllow the molho to simmer uncovered for approximately 8 to 10 minutes before adding the pork.This helps mellow the raw alcohol flavour and allows the seasonings to come together.
- Step 5: Add the BifanasSeparate the super-thin pork slices and add them individually to the simmering molho.Use tongs to gently move the meat around, ensuring the slices are separated and coated in the sauce.
- Step 6: Add the LemonSqueeze in the juice of ½ small lemon.Bring everything back to a very gentle simmer.
- Step 7: Cook the BifanasReduce the heat to low and cover the pot.Allow the pork to simmer gently for approximately 30 to 40 minutes, stirring every 10 minutes and separating any slices that stick together.The meat should become tender and absorb the flavour of the molho.If the sauce reduces too much, add a small splash of additional beer or white wine.
- Step 8: Taste and AdjustTaste the molho and adjust the salt, white pepper or piri-piri if needed.If you prefer a little more acidity, add a small squeeze of lemon.Allow the bifanas to simmer for another 5 minutes.
- Step 9: Let the Bifanas RestTurn off the heat and allow the bifanas to rest in the molho for 20 to 30 minutes before serving.This gives the flavours time to settle and allows the pork to absorb even more of the sauce.
- Step 10: Assemble and ServeSplit the fresh papo secos or moletes.Fill each roll generously with the cooked pork and spoon some of the warm molho over the meat.Serve immediately while the bifanas are warm and the bread is soaking up that delicious sauce
Notes
Pork: Use super-thin pork slices for the best texture. The pork cooks directly in the molho without being seared beforehand.
Pork lard: If you don't have banha, replace the 2 tablespoon pork lard with 1 additional tablespoon olive oil, using 4 tablespoon olive oil in total.
Beer: Super Bock is a Portuguese favourite, but you can use another light lager if you cannot find it.
Port wine and whisky: You can replace either with an equal amount of additional white wine or beer. The flavour will be slightly different.
Piri-piri: Adjust to your preference or leave it out for a milder sandwich.
Molho: Keep the meat at a gentle simmer rather than a rolling boil. If the sauce reduces too much, add a splash of additional beer or white wine.
