Bifana Sliders with Porto Caramelized Onions 🇵🇹🔥
These Bifana Sliders are a Portuguese inspired twist on the classic bifana sandwich. Juicy marinated pork is slow cooked in garlic, white wine, paprika, and spices, then served on toasted slider buns with rich Porto caramelized onions and creamy mayo. Perfect for sharing and full of bold Portuguese flavour.
Ingredients
- 2-2.5 lbs pork loin or pork shoulder, thinly sliced
- ¼ cup olive oil
- 6 cloves garlic, minced
- 2 cups white wine
- 2-3 tablespoon paprika
- 2 tablespoon tomato paste
- 1-2 tablespoon pimenta moÃda
- ¼ cup fresh parsley
- 2 bay leaves
- salt to taste
- ¼-1/2 teaspoon white pepper to taste
- dash of smoked paprika add more if you like the smokey flavour
- ¾ cups beer super bock or similar
- slider buns
- butter for toasting
- mayo or piri piri mayo
- cheese for assembling but optional i used mozzarella
Porto Caramelized Onions
- 3 large onions, thinly sliced
- 2 tablespoon olive oil
- 2 tablespoon porto wine
- 1 tablespoon fig jame (optional)
- pinch of salt
Instructions
- In a large bowl combine olive oil garlic white wine paprika tomato paste pimenta moÃda parsley bay leaves salt white pepper and smoked paprika. Mix well.
- Add sliced pork and coat well. Cover and marinate for at least 4 hours or overnight for best flavour.
- Heat a large pan over medium high heat. Cook pork in batches until lightly browned. Remove and set aside.
- Add beer to the pan to deglaze scraping up all the flavour from the bottom.
- Return pork to the pan. Reduce heat to low and simmer until pork is tender and sauce has thickened and coats the meat.
- Add remaining marinade and bring to a gentle simmer.
- While pork simmers make the Porto caramelized onions. Heat olive oil in a pan over medium heat.
- Add onions and a pinch of salt and cook slowly until soft and golden.
- Add Port wine, a splash of red wine vinegar and reduce until glossy. Stir in fig jam if using and mix well.
- Butter slider buns and add cheese if using and then toast until golden.
- Assemble sliders with pork Porto caramelized onions and mayo or piri piri mayo.
Notes
- For best flavour marinate overnight.
- Porto caramelized onions with fig jam add a sweet rich depth that pairs perfectly with the pork.
- These sliders can be made ahead and reheated gently before serving.
