The star of this recipe is the Porto caramelized onions ๐ง
Slow cooked onions are finished with Port wine ๐ท, creating a rich, glossy, slightly sweet topping that enhances the savoury pork and adds depth to every bite.
For an optional upgrade, stir in a small spoon of fig jam ๐ฏ at the end. This adds a subtle natural sweetness that pairs beautifully with the Port wine and creates a more luxurious restaurant style flavour profile.
Creamy Mayo Finish ๐ค
A layer of mayo or piri piri mayo adds creaminess and a gentle kick ๐ถ๏ธ
It balances the richness of the pork and onions and ties everything together perfectly.
Bifana Sliders Recipe ๐๐ต๐น
Ingredients
Pork Marinade
- 2 to 2.5 lbs pork loin or pork shoulder, thinly sliced ๐ฅฉ
- ยผ cup olive oil ๐ซ
- 6 garlic cloves, smashed ๐ง
- 2 cups white wine ๐ท
- 2 to 3 tablespoon paprika ๐ถ๏ธ
- 2 tablespoon tomato paste ๐
- 1 to 2 tablespoon pimenta moรญda or chili flakes ๐ถ๏ธ
- ยผ cup fresh parsley, chopped ๐ฟ
- Dash of smoked paprika (optional)
- 2 bay leaves ๐
- Salt to taste ๐ง
- White pepper to taste โช
- ยพ cup beer (such as Super Bock or similar) ๐บ
Porto Caramelized Onions
- 3 large onions, thinly sliced ๐ง
- 2 tablespoon olive oil ๐ซ
- 1 to 2 tablespoon Port wine ๐ท
- Splash of red wine vinegar
- 1 tablespoon fig jam (optional) ๐ฏ
- Pinch of salt ๐ง
To Serve
- Slider buns ๐
- Cheese (optional but so tasty)
- Butter for toasting ๐ง
- Mayo or piri piri mayo ๐ค๐ถ๏ธ
Instructions ๐ฉโ๐ณ
- In a large bowl, combine olive oil, garlic, white wine, paprika, tomato paste, pimenta moรญda, parsley, bay leaves, salt, and white pepper ๐ง๐ท๐ฟ. Mix well to create the marinade.
- Add the sliced pork and coat thoroughly ๐ฅฉ. Cover and marinate for at least 4 hours or overnight for best flavour โณ.
- Heat a large pan over medium high heat ๐ซ. Cook the pork in batches until lightly browned. Remove and set aside.
- Add the beer to the pan ๐บ to deglaze, scraping up all the flavour from the bottom.
Pour in the remaining marinade and bring to a gentle simmer ๐ฅ. - Return the pork to the pan and reduce heat to low. Simmer until tender and the sauce has thickened and coats the meat ๐ค.
- While the pork simmers, prepare the Porto caramelized onions ๐ง . Cook slowly in olive oil with a pinch of salt until soft and golden.
- Add Port wine, red wine vinegar ๐ท and reduce until glossy. Stir in fig jam ๐ฏ if using and mix until fully combined.
- Butter slider buns ๐ง and toast with cheese until golden and crisp ๐.
Assemble sliders with pork, Porto caramelized onions, and mayo or piri piri mayo ๐ค๐ถ๏ธ.

Bifana Sliders with Porto Caramelized Onions ๐ต๐น๐ฅ
Ingredients
- 2-2.5 lbs pork loin or pork shoulder, thinly sliced
- ยผ cup olive oil
- 6 cloves garlic, minced
- 2 cups white wine
- 2-3 tablespoon paprika
- 2 tablespoon tomato paste
- 1-2 tablespoon pimenta moรญda
- ยผ cup fresh parsley
- 2 bay leaves
- salt to taste
- ยผ-1/2 teaspoon white pepper to taste
- dash of smoked paprika add more if you like the smokey flavour
- ยพ cups beer super bock or similar
- slider buns
- butter for toasting
- mayo or piri piri mayo
- cheese for assembling but optional i used mozzarella
Porto Caramelized Onions
- 3 large onions, thinly sliced
- 2 tablespoon olive oil
- 2 tablespoon porto wine
- 1 tablespoon fig jame (optional)
- pinch of salt
Instructions
- In a large bowl combine olive oil garlic white wine paprika tomato paste pimenta moรญda parsley bay leaves salt white pepper and smoked paprika. Mix well.
- Add sliced pork and coat well. Cover and marinate for at least 4 hours or overnight for best flavour.
- Heat a large pan over medium high heat. Cook pork in batches until lightly browned. Remove and set aside.
- Add beer to the pan to deglaze scraping up all the flavour from the bottom.
- Return pork to the pan. Reduce heat to low and simmer until pork is tender and sauce has thickened and coats the meat.
- Add remaining marinade and bring to a gentle simmer.
- While pork simmers make the Porto caramelized onions. Heat olive oil in a pan over medium heat.
- Add onions and a pinch of salt and cook slowly until soft and golden.
- Add Port wine, a splash of red wine vinegar and reduce until glossy. Stir in fig jam if using and mix well.
- Butter slider buns and add cheese if using and then toast until golden.
- Assemble sliders with pork Porto caramelized onions and mayo or piri piri mayo.
