Favas com Chouriço (Portuguese Fava Bean Stew) 🇵🇹🫘
A comforting Portuguese fava bean stew made with smoky chouriço, olive oil, garlic, wine, and tomato sauce. High in fibre, protein-packed, and perfect with crusty bread.
Ingredients
- 1 large onion
- ½ cup extra virgin olive oil
- 3 tablespoon fresh chopped parsley
- 2 tablespoon pimenta moida (adjust to taste)
- ½ teaspoon white pepper
- salt to taste
- 4-6 minced garlic
- ½-1 tablespoon paprika
- 1 cup tomato passata
- 3 cups water
- ½ red wine
- 2 chouriço (sliced)
- 750 g fava beans (thawed)
- 2 bay leaves
- 1 tablespoon tomato paste
Instructions
- Heat olive oil in a large pot and sauté onion until soft.
- Add garlic,bay leaves, paprika, parsley, tomato paste and pimenta moida sauce.
- Add chouriço and cook for 2 to 3 minutes.
- Pour in wine and simmer briefly.
- Add tomato sauce, water, salt, and fava beans.
- Cover and simmer on low for 30 to 40 minutes.
- Garnish with parsley and serve hot.
Notes
Serve with crusty bread and a drizzle of olive oil for the best flavour.
