Favas com Chouriço is a classic Portuguese dish commonly made in homes across Portugal, especially during cooler months or for comforting family dinners. Using frozen fava beans makes this recipe much more accessible while still giving you that authentic flavour and texture. I used the Ferma brand frozen fava beans, which can usually be found at local grocery stores in the frozen vegetable section.

Ingredients You’ll Need 🛒

1 large onion, finely chopped
½ cup extra virgin olive oil
3 tablespoons fresh parsley, chopped, plus more for garnish
2 tablespoons pimenta moida sauce 🌶️
½ teaspoon ground white pepper
½ teaspoon ground black pepper
Salt to taste
1 teaspoon garlic paste
1 teaspoon sweet paprika
¾ cup tomato sauce 🍅
3 cups water, plus more if needed
½ cup red wine 🍷
2 chouriços, sliced into rounds
750 g frozen fava beans, thawed 🫘
2 Bay Leaves
1 tablespoon Tomato Paste

How to Make Favas com Chouriço

Step 1: Cook the Onion

Heat the olive oil in a large pot over medium heat. Add the onion and sauté until soft and lightly golden, about 6 to 8 minutes.

Step 2: Build the Flavour

Add the garlic paste, paprika, parsley, white pepper, black pepper, tomato paste and pimenta moida. Stir for about 30 seconds until fragrant.

Step 3: Cook the Chouriço

Add the sliced chouriço and cook for 2 to 3 minutes until it releases its oils and flavour.

Step 4: Add the Liquids

Pour in the red wine and simmer for 2 minutes. Add the tomato sauce and water, then season with salt.

Step 5: Simmer the Favas

Add the thawed fava beans and stir well. Reduce the heat to low, cover, and simmer for 30 to 40 minutes, stirring occasionally. Add more water if needed.

Step 6: Finish & Serve

Taste and adjust seasoning if needed. Garnish with extra parsley and a drizzle of olive oil before serving. ✨

Don’t rush the onions. Letting them soften properly builds flavour.
If you like a smokier flavour, add a pinch of smoked paprika.
Add a splash of vinegar or lemon juice at the end to brighten the dish.

Ingredients
  

  • 1 large onion
  • ½ cup extra virgin olive oil
  • 3 tablespoon fresh chopped parsley

Instructions
 

  • Heat olive oil in a large pot and sauté onion until soft.
  • Add garlic,bay leaves, paprika, parsley, tomato paste and pimenta moida sauce.
  • Add chouriço and cook for 2 to 3 minutes.
  • Pour in wine and simmer briefly.
  • Add tomato sauce, water, salt, and fava beans.
  • Cover and simmer on low for 30 to 40 minutes.
  • Garnish with parsley and serve hot.

Notes

Serve with crusty bread and a drizzle of olive oil for the best flavour.
