Although every region has its own twist, the heart of the dish remains the same: beautifully seasoned chicken slowly cooked with rice so every grain absorbs the rich broth.
Some families add saffron while others include peas, carrots or roasted peppers. In the Azores, you’ll often find regional spices or local chouriço added for extra flavour. My version combines some of those traditional elements while keeping the recipe approachable for today’s busy home cooks.

How to Make Portuguese Arroz de Galinha 🍗🍚
One of the things I love most about this recipe is that everything comes together in one pot. Every step builds another layer of flavour, resulting in juicy chicken and perfectly seasoned rice that tastes like it has been simmering all day.
Step 1: Season the Chicken
Pat the chicken legs dry with paper towel.
Season generously with:
● 2 teaspoon sea salt
● 1 teaspoon white pepper
● ½ to 1 tablespoon pimenta moída
Allow the chicken to marinate for at least 15 to 20 minutes while you prepare the remaining ingredients. Even this short resting time allows the flavours to penetrate the meat.
💡 Rainha Tip: If you have extra time, season the chicken a few hours ahead or even overnight for even more flavour.
Step 2: Brown the Chouriço 🌶️
Heat a large Dutch oven or heavy-bottomed pot over medium heat.
Add the sliced chouriço and cook for about 4 to 5 minutes until lightly crisp and the oils have rendered.
Remove the chouriço with a slotted spoon and set aside.
Don’t wash the pot!
Those smoky oils left behind become the flavour base for the entire dish.
Step 3: Brown the Chicken 🍗
Add about 1 tablespoon of olive oil if needed.
Place the chicken legs into the pot skin side down.
Brown them for about 3 to 4 minutes per side until golden brown.
Remember, you’re not cooking the chicken through yet. You’re simply creating colour and locking in flavour.
Remove the chicken and set aside.
✨ Those browned bits on the bottom of the pot are pure gold. They’ll melt into the sauce once the wine is added.
Step 4: Build the Flavour Base 🧄🧅
Reduce the heat to medium.
Add another tablespoon or two of olive oil if the pot looks dry.
Add:
● diced onion
● red bell pepper
Cook for about 5 to 7 minutes until softened.
Stir in:
● garlic
● 1 tablespoon paprika
● 1 tablespoon dried parsley
Cook for about one minute until fragrant.
Your kitchen should already smell incredible.
Step 5: Deglaze with Portuguese White Wine 🍷
Pour in 1 cup of Portuguese white wine.
Using a wooden spoon, scrape every browned bit from the bottom of the pot.
Those caramelized bits dissolve into the wine and become one of the biggest flavour boosters in the recipe.
Let the wine simmer for 2 to 3 minutes to cook off the alcohol.
Step 6: Add the Rice 🍅🍚
Stir in:
● 2 cups long grain white rice
● 1 cup crushed tomatoes
● 1-2 Bay leaves
● 4½ cups chicken broth
Mix everything together until well combined.
Taste the broth before adding the chicken back in.
If needed, add a little more salt.
The broth should taste slightly more seasoned than you think because the rice will absorb the seasoning as it cooks.
Step 7: Bring Everything Together ❤️
Nestle the browned chicken legs back into the rice.
Scatter the cooked chouriço over top.
Bring everything to a gentle boil.
Reduce the heat to low.
Cover with a lid.
Cook for 30 to 35 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C).
Try not to lift the lid while it cooks. The trapped steam is what gives you perfectly fluffy rice.
Step 8: Finish with Peas 🫛
During the last 10 minutes of cooking, sprinkle the frozen peas over the rice.
Cover and allow them to steam until bright green and tender.
The peas add a little sweetness and beautiful colour without overpowering the dish.
Step 9: Let It Rest
Once cooked, remove the pot from the heat.
Let the arroz de galinha rest for about 10 minutes before serving.
This allows the rice to finish absorbing any remaining liquid and results in the perfect texture.
Finish with fresh chopped parsley if desired and serve warm.

- 1 large onion, diced
- 5 garlic cloves, minced
- 1 red pepper, sliced
- 1 tablespoon paprika
- 1 tablespoon dried parsley
- 1 cup white wine
- 2 cup long grain white rice, rinsed
- 1 cup crushed tomatoes
- 1-2 bay leave
- 4 ½ cups chicken broth
- salt to taste
- 1 cup frozen peas
- fresh parsley for garnish (optional)
Instructions
- 1. Season the ChickenSeason the chicken legs with the salt, white pepper, and pimenta moída. Let them rest for 15 to 20 minutes while you prepare the remaining ingredients.
- 2. Cook the ChouriçoHeat a large Dutch oven or heavy-bottomed pot over medium heat. Add the sliced chouriço and cook for 4 to 5 minutes until lightly crisp and the oils have rendered.Remove with a slotted spoon and set aside.
- 3. Brown the ChickenIf needed, add 1 tablespoon of olive oil to the pot.Brown the chicken legs for about 3 to 4 minutes per side until golden. They do not need to be fully cooked.Remove and set aside.
